Cooking tip
  • Moisten the cookies for just a moment to avoid breaking them or making the base too soft.
  • The dulce de leche repostero helps to get firmer layers. You can also use traditional dulce de leche if it is very thick.
  • If the cream cheese is too cold, let it sit for a few minutes at room temperature to facilitate a mixture without lumps.
  • Do not add too much cocoa to the surface, as it could give it a bitter taste.
  • Resting is essential for the cookies to absorb the moisture from the cream and coffee, and to acquire a soft and compact texture.
  • Keep the chocotorta well covered and refrigerated, and consume it preferably within three days.
  • If you use a removable dish, you can briefly pass a warm cloth over the outside to facilitate unmolding, without heating the dessert too much.
