Step-by-step method
- 01

Wash and prepare
Wash the vegetables very well and prepare perfectly clean jars or containers. Keep in mind that this preparation should be refrigerated and is not intended for storage at room temperature.
- 02

Salt the eggplant
Cut the eggplants into medium-sized strips or cubes. Place them in a colander, sprinkle with half of the coarse salt, and let them rest for 30 minutes.
- 03

Rinse and dry
Rinse the eggplant quickly and dry it very well with a clean cloth or paper towels.
- 04

Cut the vegetables
Cut the bell peppers into wide strips, the carrots into fine sticks, and the onion into feathers. Divide the cauliflower into small florets, peel the garlic, and cut it into thin slices.
- 05

Prepare the marinade
Place the vinegar, sunflower oil, sugar, oregano, ground chili pepper, black pepper, bay leaves, and the remaining salt in a large pot.
- 06

Cook the firm vegetables
When the mixture starts to heat up, add the carrots and cauliflower. Cook for 4 minutes over medium heat.
- 07

Complete the cooking
Add the onion, bell peppers, eggplant, and garlic. Stir carefully to cover everything with the marinade and cook for 8 to 10 minutes.
- 08

Check the doneness
Avoid overcooking the vegetables: they should be tender but still firm. If the mixture boils too vigorously, reduce the heat.
- 09

Adjust the acidity
Taste the marinade carefully and adjust only if necessary. If you prefer a more acidic flavor, add a small amount of vinegar before finishing the cooking. Do not add water.
- 10

Rest and pack
Turn off the heat and let the antipasto rest in the pot for about 15 minutes. Remove the bay leaves and distribute the vegetables with their marinade in clean glass containers, making sure they are covered with the liquid.
- 11

Cool and refrigerate
Let the containers cool without covering them completely until they lose their intense heat. Then, close them and refrigerate. Let them rest for at least 12 hours to allow the flavors to integrate.
- 12

Serve the picnic
Remove the antipasto from the refrigerator about 15 minutes before serving. Place it in a dish with homemade bread, toast, cheese, olives, or cold cuts.
- 13

Store safely
Always keep it refrigerated and consume it within 5 days. If it has an unusual odor, unusual bubbles, color changes, or any sign of spoilage, discard it.
