Step-by-step method
- 01

Dry the legs
Dry the legs very well with paper towels. If they are frozen, thaw them slowly in the refrigerator and dry them completely. You can keep them joined at the joint or separate the pieces carefully.
- 02

Season the flour
Place the flour in a large plate. Add the salt and black pepper, and mix until they are evenly distributed.
- 03

Lightly flour
Pass each leg through the mixture, covering both sides with a thin layer. Gently shake off the excess.
- 04

Melt the butter
Heat a large skillet over medium heat. Add half of the butter and let it melt until it forms a light foam, without darkening or smoking.
- 05

Brown the first side
Place the legs without overcrowding and cook for 3 or 4 minutes on the first side. Work in two batches if the skillet is small.
- 06

Cook the second side
When they are golden and come off easily, turn them over with tongs. Cook for another 3 or 4 minutes, until they are firm, well cooked, and golden on both sides.
- 07

Remove the legs
Transfer the cooked legs to a plate and keep them nearby without covering them too much. If necessary, remove the burnt flour residue from the skillet, preserving the golden juices.
- 08

Flavor the butter
Add the remaining butter to the skillet and reduce the heat slightly. When it melts, add the chopped garlic and cook for 30 or 40 seconds, stirring constantly.
- 09

Add parsley
When the garlic is slightly colored and the butter is fragrant, add the chopped fresh parsley and mix to release its aroma without burning it.
- 10

Add lemon and sauce
Return the legs to the skillet and turn them to coat with the sauce. Squeeze the lemon juice over them, removing the seeds.
- 11

Integrate the flavors
Move the skillet for a few seconds to combine the butter, garlic, parsley, and lemon, without cooking for too long or drying out the meat. Taste the sauce carefully.
- 12

Serve with lemon
Serve the legs immediately, bathed in the garlic and parsley butter. Accompany with the reserved lemon wedges.
- Dry the legs very well before flouring them to improve adhesion and avoid splashing.
- Use a thin layer of flour and do not overfill the skillet to achieve a uniform golden brown.
- Cook the garlic over moderate heat for a short time to flavor the butter without burning it.
- Medium heat helps to brown the legs without burning the butter.
- Serve immediately to preserve the tender texture and golden brown.
- Crispy bread and a simple salad are suitable accompaniments to soak up the butter and add freshness.
